It’s very similar to skirt steak, but:
- Slightly thicker and wider
- Leaner with a tighter grain
- Typically more uniform in shape — great for slicing and plating

Flank steak is a lean, flavorful cut that cooks quickly and works especially well with marinades, making it an ideal choice for both weeknight dinners and summer grilling. Flank steak shines in dishes like fajitas, grain bowls, or salads, and it can be prepped ahead of time — just marinate, sear, and slice for a bold, beefy meal that’s ready to go. Cooked right, flank steak can be incredibly juicy and satisfying despite its lower fat content.

- Marinate for 2–6 hours to add tenderness and flavor (30 minutes minimum)
- Grill over high heat to medium-rare (125–135°F)
- Let it rest for 5–10 minutes
- Slice against the grain — this is key to tenderness
- Don’t over cook the steak! It will become very tough and chewy.
